I painted my '69 Cardinal with Behr high gloss exterior paint but it still isn't very glossy. Plus after several coats, the color is still uneven. What should I do? Will the color eventually even out after more and more coats? Should I apply a clear coat after that? Which kind? I'm in Phoenix. Any ideas of someone here who could help me?

It all depends on the prep and exact paint used. Please share some photos with us. There is a tutorial at the top of every board. I wouldn't clear coat if you are not happy with the existing paint.
Also, high gloss tends to show every flaw so it depends on what direction you're viewing it whether it looks smooth enough.

I agree with vikx...high gloss is hard to get right.
