Unless it gets wet, like absolutely sopping wet, wood does not conduct electricity.

Not only that, a ground is a ground is a ground. On a 12 volt system, the hot must touch the ground to short out. So, the ground bracket can be attached to anything that isn't Hot. The hot wire must never come into contact with a ground. That would be the metal frame, skin, ground wires, etc.

Speaking of grounds, I have a 58 airflyte,I'm up dating the electrical. I installed a 15 amp breaker system and new 12 system. Can they both be grounded to the frame?

Yes, they both need to be grounded to the frame. Ground each separately to different frame attachments.
