I had some asphalt waterproofing left over, so added it to the lower skirt boards, but was wondering if anyone also painting it onto the curbing and other possible water intrusion areas? Only downside I can think of is the mess...

I put some wood sealer on the outside of my 1/2in walls and one downside I can see is that you need to be careful about things not seeping through to the nice side. On one of my panels I wasn't careful around the electrical, etc. holes and the edges and it darkened them a bit. I imagine with 1/8in ply it could go right through.

We were planning on painting any areas that could possibly be exposed. Hubby has a bunch of leftover oil based rust prevention paint from work (they switched brand's, and since it's a food processor, they have to have MDS for everything they use in the plant). I did talk him into doing the underside with asphalt, but after finding all the damage on the curbing, I'm thinking of using it on that also.

I have used roofing cement on the underside of the teardrop camper floors that I built and any exposed wood parts, under the camper. It works very well at keeping water out and damage from road rash.
I have also, seen it used on Serro Scotty and Shasta undersides, used to protect all wood framing.

I applied TS fence post paint to all the sill boards before and after I installed the plywood sides so the ply edges would be protected, also painting it up the ply for about 12" all the way around, partially because I also had some left over and didn't want to ever have to see or smell that nasty stuff again.
