I have a 1967 Aristocrat, that has all good working appliances. The camper itself has so much water damage, that it needs to be totally gutted and rebuilt. Not having the time to do this, I am wondering if I could sell the appliances (fridge, stove, heater, water tank). Does anyone know if these parts are highly sought-after, or would I be wasting my time?

Hello and welcome. The appliances from the 50s canned hams are more sought after, but there will be someone who will want your stove especially if it is in good condition. Please don't gut your trailer. Leave the cabinets in and work from the outside in. First remove the aluminum sidong that we refer to as skins. That way you can see where the rot is. I agree on don't gut your trailer.
The stove is worth selling, condition dictates value. Be sure the fridge gets cold because many seam to work but are failing. If the heater WORKS, it might be sellable if it's a passive (no fan or T'stat). The water tank is old, so leave it.

Thank you for your input. The rot is pretty extensive and I feel the camper is risky at best to haul down the road. Probably looking at all new wood to get it up to par. The jalousie windows are all good. Are folks looking for these?

I had a bundle of jalousies and sold maybe 3 in 15 years. If it's the exact size someone is looking for, they sell, but otherwise storage space is filled with them. I sold mine for $20 each. 50s parts are much more sought after than 67s.
