Hello - I'm new to the forum and I'm new to renovating my camper so please excuse anything you might think stupid- I'm just learning! I have a 69 Bonanza. I am taking the kitchen out - no shower - it will have a toilet though. Would I need a holding tank of water? Could I somehow just make an attachment that could be used w the toilet that a hose could hook up to?

Water tanks are not something I have a lot of experience with so I'll let our more knowledgeable members take your question. I'm sure they will chime in soon.

The only stupid questions are the ones not asked... You really do not need a holding tank to feed fresh water for any fixture including the toilet, if you are going to be camping only in parks with hookups. The holding tanks are primarily for "dry camping" where hookups are not available.
Be sure to think through the other end too. You will need to have a drainage that works too. The choices are fairly simple, but remember that you can't run the drain open to the septic (or tote, whichever option you will be using). A holding tank of some sort is necessary in order to flush the line out.

Ten is absolutely correct. RV toilets do not work well without a black water tank. They do not have a good flushing cycle as a normal house toilet would. (less water means a gravity emptying with a little swish to clean up)
Seriously, I suggest a porta potti, the new Curve is very popular. They are easy to dump and have a secure bracket at the floor. No running water needed, no tank, just an occasional visit to a regular toilet to empty.

The military taught that a 1` X 1` X 1` dug into the ground is what was needed for sanitation purposes. I pack along a post hole digger and chomp Me out a hole about 3` deep, about 8" diameter, a hole that size is good for about four days, just throw in a little dirt after each use. Finish covering it up before leaving the camping spot.
