I am just about to start paneling parts of the trailer 69 Shasta starflyte that I reframed. Any ideas on the best product to get to match the new birch panels with the originals. A lot of the old panels are in perfect shape. I am redoing the complete front and back of the trailer.

Everyone will have a different answer to this question.
If the old finish is Amber shellac, I would use Bull's Eye Amber Shellac. Home Depot sells it. Our first camper had a darker stain with a Polly cover coat and I used Penofin Blue Label bamboo oil followed by spar urethane. It looks great. My second camper was a yellowish Shasta Tint I couldn't match. I tried everything. I had to sand down the entire camper and then refinish everything with 5 coats of shellac, three Amber and two clear.
Take a piece of left over (new) birch and experiment before you commit.

And if you use the amber make sure to top coat it with the clear wax free sealer. Amber doesn't dry with as hard a finish as the clear.

Starflytes had "blond" paneling. Probably a wood grain vinyl surface veneer. I highly doubt shellac will match anything, clear or amber. If you are changing all the panels, then going with shellac makes sense.
Seeing as you have some of the original blond, I would experiment with an overspray of light tan paint and then top coat with something clear. A very light stain might bring the grain out before the tan overspray. It's almost impossible to match, but keep trying samples!
NOTE: If you are colorblind or sorta, get another to eyeball the tint on the blond paneling. It can range from green to pink and in between. I'm thinking on the greenish side because of my 68, but not sure.
