First, I think G1S was explained as a grade rating on another thread...which I can't find.
What is the difference between G1S birch and G1S Baltic Birch? Grain? How dark the wood is to start with?

Here in western Washington, G1S = good one side. G1S is typically sold as an A4 grade, the face side being A grade and the back side grade 4. Here, birch is available in natural, white and red, although not every type is available in every thickness. Natural birch includes both white and red color variation and is typically used in our trailers.
True Baltic Birch plywood is produced from Birch trees from the Baltic region of Europe. It is usually white without the red color variation.
Most 1/8" birch is actually 3.0mm.

I have found Baltic birch in 5x5 panels only. BB is somewhat of a pain to work with imho.

I like Baltic birch for constructing drawer boxes and such like but personally I don't think it is interesting enough for a wall panel, it is very white which someone mentioned. Also, I don't think you will get true BB in anything but 5X5 sheets, although I could be wrong but that is only how I have seen it.
