We need/want to replace the birch on just one wall in our 67 Frolic. Are there any tips on taking things apart and replacing it when you're doing just one wall? I've tried searching and googling and all I have found are people doing the entire camper. We are new to this and I just want to make sure we approach it correctly from the beginning.

If "one wall" is bad, there is probably damage to the framing behind it. It might be a good idea to lift the skin on that wall and see what the skirts and framing look like. Much easier to repair from the outside in...
It's not a big a job as you might think to lift the skins. Certainly, you don't have to take the whole trailer apart to fix one wall. But it's nice to at least look at what you have and then decide on the course of action.

If you are looking at replacing one whole wall, along with vikx's good advice please be aware that moisture that intrudes under the skin does not respect the laws of gravity, by flowing straight down the wall from the point of entry. It has a tendency to migrate along framing too. It may be, that while most of the moisture has run down the one wall, that the corners to at least midway on both end walls as well as along the ceiling framing my also have had smaller amounts of the moisture migrate and start it's deterioration, but not yet to the point of panel warp/frame rot/sag. Lift the skins front and back too, and make sure you have the whole problem identified, and give the ceiling panels some attention to signs of staining/discoloration or the beginnings or sag closest to the damaged wall.
