I can paint fairly good; I've painted a few cars and a few bikes. I'll be using a single phase urethane in two color; white over turquoise. I feel it would be so much easier to paint the sides before their attached to the actual trailer; no tape, no mess. Two days later, install.
Does anyone see a danger sign here? Thanks

Are you fairly good at handling metal and cursing it and throwing it as far as you can without scratching it when it don't cooperate ? Lola little tape time is nothing to seeing your paint scratched. If it can go wrong it will. Especially if you are using old metal

Don't paint the skin before it's installed. You will end up with many scratches.
New "Pre-Painted" aluminum is a totally different animal. The paint is "baked on", and is very durable almost like powder coating.
