I am installing my toilet. It already has a rubber gasket on the bottom- but I was going to use a wax ring. Do I use both- or just one? And which one? Thanks Kathy IMG_3451 by kathy, on Flickr

Are you using an RV flange? If so, just the rubber gasket. Most RVs don't use wax because of the heat inside when in storage.

If that is the original rubber ring, you may want to replace it. The dryrot just like any other rubber product. It probably would never give you a problem, but if replacement is easily possible, why run that risk?
You don't need a wax seal, the rubber seats against the floor flange. They are built so that the outlet inserts into the flange.
