I've heard a few of you recommend a two-stage regulator for the propane system. But since I only have a stove with two burners and no other LP appliances, do you think I could get away with a one-stage? This one says it's approved in "small portable applications": www.vintagecampers.com/viewpart.php?partID=201 I know it's only a matter of $20, but at this point if I had $20 for every time I said "It's only $20" I could buy a whole new camper

For some reason, I can't view your photos, but I just needed a 3/8 to 3/8 flare coupler to reuse my original copper pipe with the regulator I linked. I got it at Ace because Home Depot was out of stock.

Ah yeah, I thought I had figured out a workaround to use google photos, which I use anyway, but it looks like I'll need to keep uploading my photos in two places. Oh well.... I just went to the hardware store and it looks like they have something that will work for me. Thanks for your help!

It may be a matter of what is required for a travel trailer vs. a stationary appliance. You should check with the DMV website for your state, and perhaps with a reliable RV dealer in your state, to be sure what is required equipment.
