Here's the way I see it... Cold air settles to the lowest area of a contained space. That's just how it works. So if your AC unit is down by your feet, you will have very cold feet and the rest of you will be warmer. The most efficient way to cool a contained space is to have the incoming colder air up high. AC is a must here in the deep South. The heat really keeps me home during the summer. I hate cooking in a metal can at night.
I wonder if the drain will collect the moisture or the unit will sweat on the sides? Here the humidity is terrible in the summer.
I may put in a smaller fridge and try to work something like this out.

Well so far it has worked very well in humid conditions. I got to experience it. And the collected condensation evacuated through the tube just fine.
