We don`t boondock and I don`t like to be tied up cooking while we`re camping. I thought I`d share one of my favorite crock pot recipes. 1 large onion.....cut into 1/4 and place in the bottom of crock pot. 1 Boston butt.....wash, dry and place on top of the onion. The onion will act like "feet" keeping the meat off the bottom off the crock pot. 1 12oz can of Dr Pepper.....pour over the Boston butt. We like spicy food so I add 1 small can of Chipolte peppers in adobe sauce, on top of the Boston butt. I cook this on low over night, lunch time the next day, I use a spoon to remove most of the fat/grease which is layered on top and use 2 forks to pull it apart (still in the pot with juices). We enjoy this on sesame seed buns or on a plate with coldslaw etc. OK.....YOUR TURN....Crock pot recipes please

Pork in Salsa Verde with Hominy
This could NOT be any easier - the title is pretty much all you need (pork+salsa verde + hominy) but here you go...
1 piece of pork roast - I buy the enormous pork loins at Costco for under $20, chop them into 5 pieces and freeze them, very economical. You could also use chicken if you're being health conscious, but don't cook as long for chicken.
3-4 cans of salsa verde. I get whatever Mexican brand is on sale.
2 cans hominy (29 ounces each for a total of 58 ounces. Use one can if you aren't hominy crazed like my family, or don't want a bunch of pesky leftovers.)
Throw all ingredients (pork should be defrosted night before if frozen) in crockpot on low in the morning. If it starts to get dry, add another can of salsa or half a beer. Whatever. You cant ruin this. In the evening, use two forks or a pair of tongs to shred up the meet in the pot - it should just fall apart. Eat as is, or we like it in corn tortillas with some shredded cabbage and chopped cilantro. Leftovers are good the next morning, cook some sliced corn tortillas in oil, add leftover pork/hominy mixture, crack in some eggs. Serve as is, or wrapped up in burritos.

Thai Peanut Chicken and Veggies
I'm lazy, so I only make this when I've been to Trader Joe's and have a bottle of their Thai Peanut Curry. It's awesome.
Several pieces of chicken (no matter how freezer burnt, dark or white, it comes out great) Large bag frozen cauliflower Large bag frozen green beans Bottle of TJ's Peanut Sauce Optional: Can of water chestnuts Can of baby corn Sliced red bell peppers (add near the end) Chopped fresh cilantro (sprinkle on each plate just before serving) Soy Sauce to taste (I don't think it needs it but Husband likes it.)
Throw in the crockpot around noon and cook on low until dinner time. Serve over rice (you can get a rice cooker with a timer for $40 - you can put your rice, water and salt in and tell it to be ready in X hours and it will have your rice hot and ready when you get back from your trail ride, hike, etc.
