I belt sand aluminum quite often. Not so much to re-size, but just to level with the surrounding features. The belt will "load" and you'll need to change it. I'm using 50 grit, not gentle. My belt sander is my best friend.

This afternoon I made a template from the old countertop, mounted the sink edging and went at it with the belt sander. I did some tests last night and had no problem with a low grit sandpaper and it went much quicker so I used that (80 grit I believe). I went through about 1.5 belts during the process. I then cleaned the edge up with a file.
I ended up leaving about a 1/16 gap so I could caulk it in (to prevent water running down under the countertop.
Just for the public knowledge, I had tried just filing it during my tests lasts night. I actually really liked how it went, but was a really slow process. However, if you dont have a belt sander I would recommend simply using a file and your patience.

We are proud of you we knew you could do it all we had to do was keep making suggestions until we hit on one you felt comfortable with. Almost anything can be done by anyone if they hang in there until they find the solution that they like. Most of these trailers were built with few tools and simple skills, many times we try to make it harder than needed. You are now one step closer to finishing your beautiful trailer.
