I notice that many side skins are pieced with a joint running horizontal. Why aren't they simply one piece, running top to bottom?

It may have been done that way to eliminate exposed fasteners. A large piece of aluminum on the side will require many screws to be put through it.

Like everything manufactured (I am sure) it was about cost and availability.
I doubt many mills ran 7 foot plus wide sheets of aluminum. If they did I bet it would cost a bundle. It is easier to store narrower strips. It is easier to handle narrower strips.
All about the money.
