In my experience with the same on my fridge, you either need to apply each coat pretty quickly or follow the manufacturers full drying recommendations between coats. I did several nice coats and then got distracted and applied a final outside of the recoat window but not long enough for a full dry and ended up with hours of sanding and redoing the whole thing.

I agree, you can't re-coat too quickly. Also use the same brand of paint. I've done this and even after a week of drying, it still wrinkled. Some just does. I wonder what the manufacturer would say?
