Can anyone tell me what the grommets are called where the gas line goes up through the floor? They are plastic, just larger in diameter than the copper tubing with a flat end on one end for stapling to the underside and they protrude up through the floor on the inside. And where might I find them? Thanks.

Grommets and there's lots of different kinds. You can use anything to protect the tubing, even a piece of garden hose and quick ties. Take a look for rubber grommets, plastic grommets and don't forget marine grommets. You'll find something that will work.

Proper name for them is tube insulators. Check the plumbing section of any hardware or big box store. Problem is I don't remember seeing them for anything smaller than 1/2" tubing. You can also check ACE in their hardware drawers. They always have a strange selection of rubber grommets and sleeves that may work better.
