In our '66 Airflyte there are a couple of wires that look like 12V wiring coming out of the wall into the ceiling: I am trying to figure out what they were used for originally. I am thinking that there might have been a ceiling light mounted in the center of the ceiling panel that was run off of 12v - since they look like 12v wires. I will have the lower skin off the street side in a week or so and should hopefully be able to verify where they are coming from, but thought I would ask in the mean time so can start looking to buy whatever is going to go there. Does anyone have a picture of what the ceiling light (or if it was something else) originally looked like?

I think you are correct on the 12 volt side. Not sure what the light may have looked like. I've had a couple of LoFlytes (68 and 9) that had a round florescent ceiling fixture. Doesn't mean that's what yours had but a thought.
