Where do you put the dinette table during towing?
I just assume it bounces around in the interior

Mount an extruded table bracket to the table edge, and the other half of the bracket to the wall. They just lift off, and the table will not move around inside the trailer. See VTS for the parts.

Mine stay hooked to the wall, as John describes. Some have a peg in the leg bottom that fits in a hole in the floor. That keeps it from collapsing if the leg is wood. Metal legs have locks that work pretty well...

Make sure you get those table-to-wall mounting brackets facing the proper direction when installing them both on the wall and on the table edge. If you do it right the table will not jump up and out of the wall bracket. If you do it wrong it will.

One additional important thing is to make sure the front wall is "exactly flat, with no curve", or they will not easily clamp together. The bracket needs to be at the exact same height as the table.
Don't ask how I know this one. As you say, we make the mistakes, so you don't have to!
