Foil dinners and apple pies made with a pie iron over the camp fire! Deee-licious! Sweet! Tell us about the applie pies with a pie iron please. Butter two slices of bread. Put one slice in the pie iron (butter side down). Spoon on some apple pie filling and put the other piece of bread on top (butter side up). Close the pie iron and cook over the camp fire. We also make pizzas by using pizza sauce and pepperoni, etc. Walmart or any camping supply store should carry pie irons.

We have had cast iron, cast aluminum, sheet stainless and sheet steel pie iron over the years and our preference is in this order, cast iron hard to find now, cast aluminum, and then stamped sheet product only if no others are available. A thing that the kids used to really get into was trying to come up with different things to stuff them with. I have to admit that some of it was delicious and some didn't get ate, but all brought a huge amount of laughter around the campfire. I can tell you that a pie stuff with mashed potatoes and green chiles was not one of my favorites.

BREAKFAST. We cook with an electric griddle if we have electricity, I can get the whole breakfast on the griddle. We cook in cast iron skillets on the Coleman stove if we have no electricity. First I grade a potato into a pan of water for hash brown potatoes. Let the shredded potatoes soak in water 30 minutes this removes some of the starch the potato cooks better, not sticky and taste better too. We use the electric coffee maker where we have electricity, we use the old vintage percolator coffee pot on the Coleman stove if we have no electricity. Sometimes I cook bacon and sometimes Sausage. Sometimes I cook scrambled eggs, sometimes fried eggs, sometimes french toast with real butter and real maple syrup. Sometimes we have English muffins, sometimes whole wheat 9 grain bread toasted on the griddle or skillet.
LUNCH is usually something quick and easy, sandwiches, potato salad, chips, dip, hot dogs, hamburgers, Rubin Sandwich, coleslaw, nacho cheese dip & chips, ham turkey cheese sandwich, salad. Lunch is sometimes a restaurant in town if we are near a town we like to try food in different places, Chinese, India, Mexican, last week we had the best pulled port stuffed baked potato we every had.
DINNER. One of our favorites is, meat, potato and 1 or 2 vegetables with butter rolled up in aluminum foil and bakes in the camp fire, 1 for everybody. Open the foil and there is the whole dinner inside. The meat can be anything but we like meat loaf most of the time. We love Alaska style baked fish in the camp fire, cover the fish with thin 1/4" slices of Lemon and thin slices of Onion on 1 side plus butter, fold up the aluminum foil bake 7 minutes on one side and 12 to 15 minutes of the Lemon/onion side wow this is good. Thin cut BBQ pork shops cooked on the camp fire are so good we never get tired of these. BBQ baked chicken over the camp fire is good too. BBQ ribs are good too. Sometimes we have baked cherry cobber or baked peach cobbler or blackberry cobbler on the camp fire.
AFTER DARK hot chocolate is good while we look at the moon and stars and listen to the sounds of the wilderness.

When tent-camping I've used "poppin' fresh" dough just jammed on a stick over the camp fire many times (or thrown in the frying pan). Kinda burned on the outside, kinda doughy in the middle, drag it through some butter, yum.
Cut the top almost off a beer can and fold it upward, drop in an egg, fill with water, put a stick through the sippin' hole, boil it dry, hard-boiled egg!
Has anyone ever used real pie crust in a pie iron?

We eat good when we camp. 1 or our favorites is, cut a potato in 1/2 place it on aluminum foil. Mix up a meat loaf and make it into 1/4 lb balls. Place a 1/4 lb meat ball between each potato. Put some carrots, green beans, butter in there too. Roll up the foil around the whole thing and put in in your camper refrigerator. At the camp site fire up the charcoal grill about 4 pm it will be hot and ready to cook about 4:15pm. We place 2 of those on the grill and put on the lid. It needs to be turned every 10 minutes to keep it from burning on one side. After 1 hour it is ready to eat. Unfold the aluminum foil, add salt, pepper, more butter, sour cream, etc. We always take a bottle of Red Moscato by Bear Foot.
You can make this a 100 different ways. Sometimes the meat loaf is italian sausage or chicken or something else. Sometimes the vegetables are not always green beans and carrots. You can also add herbs and spices and onions.
Nice thing about this you make it at home then all you have to do is cook it. This helps to keep the supplies in the tiny refrigerator low.
We do crock pot dinners too. Turn it on after breakfast it is ready to eat about 4 pm. You can cook anything in a crock pot it is a tiny oven, it will cook meat loaf with vegetables, pork roast for pulled pork BBQ, stews, soups, beans, corn bread, cherry cobbler, cake, anything you cook in your kitchen oven at home.

I'll have what Ross is cook'in! I spent 3-4 years working with a chef and that part time gig came to a stop when damage to my knees cost more than what I was making. But, I did learn some great prepping skills and came up with better ways to have a decent meal whether it was canoe camping on the river, backpacking, or car camping.
But before all that time I wasted in a hot kitchen, a few of my favorites: If your going to be in the FL Keys, you have to have grilled FL lobster that you either caught yourself or bought from the the guy with the lobsters. If your gonna be in snow covered mountains, bring Jack Daniels for a "snow Jack". Make everyone's mouth drool by marinating a couple of steaks in Mojo about an hour before grilling - the smell on the grill will drive them crazy! Cheers!
