Adding my 2 cents. My youngest got me a 12" Lodge cast iron dutch oven for X-mas. Recently I've been researching the "how to" and "what to" cook using this implement. Its amazing what I've found. The cooking technique is actually a science in knowing how to obtain the correct cooking temperature by using a predetermined number of briquettes under the oven, as well on top of the oven, placed on the lid. I happened upon the Fogcrawler, who has a collection of recipes on YouTube under Outdoorcastironcook. They are entertaining to watch to gain a good understanding on the "how to" and "what to" cook dutch oven spectrum. My only issue in most instances, a larger oven is used, as well as the sheer amount of food prepared, more than what two of us, or for that matter, another couple could eat in one sitting. My challenge is to pick some fave recipes, then reduce the ingredient measurements to make meals that can be enjoyed in the great outdoors, that don't require a collection of Tupperware for saving as leftovers. I can't wait for the summer to come, to put our new cast iron dutch oven to use.

We use our Dutch oven for all types of soups and stews... Even simple brown rice comes out much better from a Dutch oven. To me, the most magical recipe is no knead sourdough bread... A Dutch oven makes bread you expect to see at a French bakery.

We use our Dutch oven for all types of soups and stews... Even simple brown rice comes out much better from a Dutch oven. To me, the most magical recipe is no knead sourdough bread... A Dutch oven makes bread you expect to see at a French bakery. Do you have a link to that recipe Dan? My favorite is Sour Dough Bread.

The dutch oven gives even amateur bakers the type of crust most associate with a professional loaf. Food writer Michael Pollan explores several different topics including fermentation (we immediately made a big batch of kimchee that weekend), and has some interesting opinions about bread such as modern yeast risen bread may be causing gluten intolerance that was not formerly seen in properly fermented bread.
