I recently got a good sized dutch oven which I have NO idea how to use or what I can cook in it . Does anyone have a recipe (or 2) that they would like to share?

There's a guy named Gary House on You-Tube, Cooking-Outdoors.com has a great Chili Relleno recipe for Dutch ovens . I've made several times and easy to do and yummy !

The sisters on the fly have a cookbook for Dutch ovens. Tells you about how many coals you need for what temps. I don't have it, just heard it was good. I have a different one.
I got my Dutch oven for Father's Day, haven't cooked over the fire yet.
1 large pkg. Hash browns or a few large potatoes diced 8 eggs scrambled 2 lbs. Ground sausage 10 oz. Shredded cheese I/2 cup diced onion (optional)
Preparation:
In a 12" Dutch oven, brown the sausage. Remove meat and add hash browns in sausage drippings. Smooth out on bottom of oven and spread sausage on top. (If adding onion, place over sausage.) Spread the cheese over the top. Beat eggs and add milk then pour over the mixture. Cover and cook with very little heat on bottom. Should take about 14 to 20 minutes. (About 10 minutes longer with diced potatoes.)

Here are two of my favorites. Potatoes are always good with grilled meat. Hot bread? Hot bread goes with anything and everything and in the summer shade the dough will rise so high you'll thnk that the Yeast is "Mutant"! You can reduce the bread recipe in half.. no problemo.. Dutch Oven Potatoes Ingredients • 1 lb. bacon, diced • 2 onions, diced • 2 green peppers, diced • 12 med potatoes, red pontiac, peeled and sliced dollar size • 1 lb. sharp cheddar cheese • 1/4 lb. swiss cheese • salt and pepper • mushrooms, optional Fry bacon in Dutch Oven. Add onions, peppers (and mushrooms) and saute. Pour part of the bacon grease off and add potatos. Add salt, pepper and seasoning to taste. Mix together, but don't stir while cooking. Put 8 briquettes under the oven and 14 on the lid. This will allow all the potatoes to cook uniformly without stirring. Cook approx. 45 minutes. Check with fork - when done, grate the cheese together and sprinkle evenly over the top of the potatoes and replace the hot lid. The cheese will melt down through the potatoes and they are ready to eat.
Monkey Bread Ingredients • 2 c. water (real warm) • 1/2 c. sugar • 1 T. salt • 1 T. yeast • 6 c. flour • 1/4 c. oil • 2 large eggs (beaten) • 1/4 lb. butter Mix 2 cups real warm water, ½ cup sugar, 1 tablespoon salt, and 1 tablespoon yeast. Let set until bubbly. Add 2 large beaten eggs and 3 cups flour, stir-do not beat. Add ¼ cup oil and 3 cups more flour. Dough will be sticky; cover and let raise until double in bulk. Roll dough out on a floured surface to ½ inch thickness. Cut into 2 ½ inch circles.
Melt 1/4 pound of butter in a deep 14" Dutch oven. Do not let butter get too hot. Dip circles of dough in butter, coating both sides. Lay circles of dough on inside edge of Dutch oven, overlapping approximately one third. Place the second layer of dough circles like shingles inside the first ring.
Cook with 11 briquets on the bottom of each oven and 15-20 briquets placed around the outer rim of each lid. Bake for about 25 minutes. Remove the ovens from the bottom briquets and finish cooking with top heat only for approximately 10-15 minutes more. When finished remove from Dutch oven and serve warm.
VariationsGarlic Parmesan Monkey -- Bread Follow above recipe adding ½ teaspoon garlic power to the melted butter in the Dutch oven. After circles of dough are placed in the Dutch oven sprinkle the top with ¾ cup Parmesan cheese. Sesame Seed Monkey -- Bread Follow the above recipe adding 1 tablespoon sesame seeds to the melted butter in the Dutch Oven. After circles of dough are placed in the Dutch oven sprinkle the top with 1 tablespoon sesame seeds.

Keep in mind you can also make soups and stews in a dutch oven or even just back simple breads...it doesn't all have to be gajillion calorie casseroles and desserts...save that for the pot lucks. Anything that you can cook in a crock pot will work in a Dutch Oven, Anything you can bake in an oven can be cooked in a dutch oven. www.dutchovendude.com/dutch-oven-cooking.shtml
I have a Lodge 6qt dutch oven and a 5qt cast iron pot. I cook with both on the stove and in the oven to test recipes inside where I can better control the temp and see if I like the recipe. The next step will be to move it to the coals.
I breaded and fried some chicken (drumsticks) in the cast iron pot for dinner last night. Oh my, so much for loosing weight.
First thing to do with NEW cast iron is season it properly. Cook bacon in it. Remove the bacon then wipe the bacon grease all over the inside and outside. Place the cast iron in the oven 400 degrees for 1 hour. Let it cook until cold. It will be naturally none stick as long as you use animal fat.
Try not to every use liquid cooking oil that stuff will make cast iron sticky. Crisco in a can is ok.
Anything you cook in a crock pot you can cook in a Dutch Oven over the camp fire.
I have a 3 leg handling flower pot holder from the garden center it is 6 feet tall and works good to hold the Dutch oven about 12" above the camp fire. I start a fire at breakfast then put the Dutch oven over the fire. We go hiking and exploring then return for lunch fire is out so I start another fire. We eat lunch then do more exploring and return about 1 hour before dinner. I get the fire going again food is ready to eat about 30 to 60 minutes later.
Pork Ribs are easy to cook. Boil them in water first until they are cooked. Pour off the greasy water then add a whole bottle of BBQ sauce. Cook them slow on the camp fire all day.
Pulled Pork BBQ. Put a pork roast in the Dutch oven with 1 cup of water. Cook it all day. Pour off water and fat crumble the meat. Put the meat in the Dutch oven with 1 whole bottle of BBQ sauce and stir well. The BBQ sauce soaks into the meat and dehydrates. It makes enough for about 12 to 15 sandwiches.
3 Bean Soup. Get a pork soup bone with plenty of meat. The night before rinse beans, drain and soak over night, drain and rinse next morning. Add beans to the Dutch oven with the soup bone. Add 1 large onion chopped. Follow direction on the 3 bean package. Do not add Salt it make beans tough. Add salt after the beans are cooked. This is good with corn bread.
Chili, Beef Stew, Vegetable soup are all good in the Dutch Oven.
You can even make Cherry cobbler, Peach cobbler, Blackberry, what every flavor you like in the Dutch oven.
Bake beans are good.
Spaghetti and meat balls are good.
Meat Loaf in the center with carrots and potatoes around the sides are good.
