I leveled the frame of my 1961 Shasta by raising the right rear corner and the left front corner, with screw jacks. Now it is all level. Should I leave it this way before installing the new ceiling panels Orshould I let it sit in its natural state? The walls are completely new, copies of the old walls that I used for patterns.

You'll want it as level as possible. The frame is very floppy so you need it level to build your camper unibody. Once it is together, the whole structure will act as one.
